Sep 2006 First Place and Second Place
Russsel E.
IPA

10 gallons

22lbs Pale Ale
1lb Munich
1lb Cara-Munich
1lb German Dark

Mash at 151

Used part of one pound 50/50 mix of pelletized Simcoe and Santiam hops,
thank you very much Mr. Patrick.

3oz hop mix at 90min
2 tsp irish moss at 20min
2oz mix at 15min
2oz mix at 3min

water treatment into the boil:
4tsp gypsum
1/2tsp salt
2tsp water salts

Fermented 1/2 with dry Safale 56 and 1/2 with dry Danstarr Nottingham yeast

Dry hopped the last 3 days with 1/2oz mix in one carboy. None in the
other.

Really like the malt profile but the hops were all wrong. Too bitter,
and don't care for the grassiness of the Santiams. Next time it will be
good old Chinooks, Centennials and Cascades. Maybe some Simcoes. And
the dry yeasts were phenomenal, F.G.s of 1.014 and 1.012 respectively.
