Bressadella Beer

Dec. 1999 MASH BOTY Competition
For 5 gallons:
- 6.6 lbs. Breiss golden light malt extract
- 3.3 lbs. John Bull light malt extract
- 1 tsp. gypsum
- 1 oz. star anise (45 min.)
- 1 vanilla bean (1/2 for 45 min., 1/2 for 20 min.)
- 1 lb. Tupelo honey
- 1 oz. N. Brewer pellet 6.5% aa (60 min.)
- 1 oz. E. Kent Goldings whole 5.1% aa (45 min.)
- 1 oz. E. Kent Goldings pellet 6.4% aa (1 min.)
- 5 grated lemon zests (end of boil)
- 1 pkg. Wyeast 1056 American Ale (in starter)
- 1 pkg. Wyeast 1098 British Ale
In 1.5 gallons filtered water, added malt, honey & gypsum. Brought to boil,
added hops, star anise & vanilla per schedule above. Added grated lemon zest
at end of boil. Did not strain lemon zest, but removed spent star anise &
hops. Transferred to glass carboy, cooled & pitched yeast. Fermented at 70F
28 days in primary. O.S.G. = 1.080. F.S.G. = 1.021
