June 2001 MASH BOTY Competition

Grain:
3 lb. Lager malt
1 lb. malted wheat
4 oz. Carapils

Mash-in with 7qts. liquor @163 F - strike 152 F run-off and sparge after 90 min.

Initial boil volume about 3.5 gal.
add 3 lb. Munton's extra light DME
4 HBU Tettnang pellets at boil
6 HBU Spalt pellets at 30 min.
1 tsp. Irish Moss at 45 min.*
knockout at 60 min.

Cool and settle for 15 min., rack into 2 gal chilled liquor, bring to 5.25 gal.
Pitch Wyeast #1007 (German Ale) pitchable tube
ferment at 65 F
rack after 9 days to secondary, drop temp. to 48-50 F
after conditioning for a couple weeks, keg and gas carbonate.

*This is the recipe as it should have been. On the beer entered, I forgot the Irish Moss and had to use finings for clarity, but still had some haze.
